My mom is getting creative with this diet of hers and came up with this little snack for a picnic/ concert, so she could adhere to her diet and still eat! It was seriously a stroke of genius on her part though.
It’s easy and quick to make for a crowd. My mama deserves a high five x7.
What you need:
- Romaine hearts; the small ones you can get at Costco are wonderful for this
- Smoked salmon
- Dill (or capers, or other topping of choice)
- Tzatziki- you can make your own by combining equal parts greek yogurt and sour cream with salt, dill, finely chopped cucumbers, and a bit of olive oil… greek yogurt by itself would taste perfectly fine too
Assemble as such: lettuce leaf, tzatziki, salmon, dill.
That’s it. Now eat it and enjoy.
